- 1). Wash and dry your knife before sharpening it. This will keep the whetstone clean, as well as making sure that no foreign matter is worked into the edge of the blade.
- 2). Place the whetstone on a flat, level surface.
- 3). Start the knife at the end of the whetstone, holding the knife blade at a 20-degree angle against the surface.
- 4). Pull the blade towards you slowly. Don't press the blade down into the whetstone--gentle pressure is all you need for the stone to work.
- 5). Turn the blade over, holding it at a 20-degree angle, and sweep it across the whetstone in the opposite direction, away from you.
- 6). Turn and blade and repeat the process for each side of the knife 10 to 20 times.
- 7). Clean the knife to remove any particles that might have remained on the blade.
