Enoki mushrooms in chili oil

Enoki mushrooms in chili oil is a traditional Chinese delicacy that you would enjoy best at a Sze chuan restaurant Singapore. You can cook it yourself if you have 200g enoki mushrooms, 1 red chili, parsley, chicken stock, chopped garlic, red chili oil, sesame oil, and white vinegar. You can choose the quantity of the ingredients according to your taste preferences. Before you start with the cooking process, chop off the roots of enoki mushrooms, wash it well and keep it aside in a plate. Remove the seeds found in the red chili, and shred it evenly and keep in a separate dish. Take a wok, fill half of it with water, and add the enoki mushrooms and shredded chilies. Now boil the water and stir for about a minute. Now take out the contents from the wok after draining the water. Keep this in a plate. Now take another plate and add the chicken stock, chopped garlic, white vinegar, salt, and red chili oil. Stir the contents well with a spatula to make a sauce. Place the parsley on the boiled mushrooms and chili flakes. Pour the sauce that was prepared with the other contents over this mushroom-combo. Add the sesame oil to it and stir well. The dish is now ready to be served. This nutritious dish tastes good even if it is served cold. You should definitely try this cooking method at least once.

Enoki-stuffed Zucchini

You need a pack of enoki mushrooms, 2 zucchinis, and 2tbsp each of minced onions, butter, and Parmesan cheese, half a cup each of bread crumbs and Mozzarella cheese, and 1tsp lemon juice to prepare this dish. You need to wash the zucchinis first and then trim it well. Now take a small amount of water and boil the zucchinis for about 7 minutes. Remove from the flame and cut them into halves, lengthwise. Now, after removing the pulp slice into tiny pieces. Stir-fry the onions in butter until it becomes tender. Now mix the zucchinis with enoki mushrooms, bread crumbs, and Parmesan cheese and toss with the lemon juice. You should then fill the zucchini shells with the mixture, spray the mozzarella cheese, and broil in a grill for few minutes until golden in color.
