TROPICAL BISCOTTI Ingredients: ½-cupMacadamia nuts, chopped ½-cupSugar ¼-cupButter, softened 2-largeEggs 1-cupChopped dried pineapple soaked in orange juice ¼-cupOrange juice, fresh (pour over dried pineapple) ½-cupCoconut, shredded 2-cupsAll-purpose flour ¾-teaspoonBaking powder Instructions: Cream sugar and butter together in a large bowl.
Add eggs and mix well.
Add pineapple soaked in orange juice and orange juice, coconut and Macadamia nuts.
Combine flour and baking powder in a medium bowl; add to pineapple mixture.
Divide dough in half on a well-floured surface and shape into a long rounded square.
Transfer shaped dough to a lightly sprayed with cooking spray baking sheet.
Preheat oven to 375°; bake at 375° for twenty minutes or until firm and lightly browned.
Cool; cut into ¾-inch slices; return slices to baking sheet and leave plenty of space around each slice and bake for another fifteen minutes or until desired crispness.
Cool completely and serve or store in airtight covered container.
Note:This is also good with chopped almonds and add 1/2 cup of grated chocolate.
