What are the key ingredients in Italian food?
The key ingredients in Italian cooking are pasta, extra-virgin olive oil, real balsamic vinegar, good wine, prosciutto, fresh herbs- oregano and basil and parmesan cheese.
What are the reasons behind the increasing popularity of Italian cuisine in India?
It's simple home-style food. The food has warmth about itself. Most of the recipes have been passed down from generations, and use simple, fresh and flavorful ingredients.
How easy or difficult is it to make Italian food at home in India?
It's very easy to cook Italian food at home in India. Today, there are a variety of pastas to choose from that are available in the market. Most Italian ingredients, such as cheese, wine, herbs, etc., are freely available in most supermarkets.
Chicken Roccaforte
Ingredients:
180 grams chicken breast
50 gms Roccaforte cheese (French blue cheese)
50 Emmental cheese
Salt, to taste
Crushed black pepper for seasoning
1 cube butter
1 tbsp olive oil
glass of red wine (Nebbiolo)
Method:
Take a chicken breast and fillet it into a butterfly cut. Season with salt and pepper and then stuff Roccaforte and Emmental cheese into the slit breast. Seal the breast with a toothpick.
In a pan, heat one tbsp olive oil and place the chicken breast on it. Cook on both sides for 4-5 minutes, remove it and let it rest. In the same pan, add the red wine and leave to cook. Then, add one cube butter and leave to cook for two more minutes. Place the chicken breast on a plate (remove the toothpick) and pour the sauce onto the plate and serve. I am sure this is the best place to eat at Powai
Costollette Di Agnello
Ingredients
3 pieces of lamb cutlet
10 gms of pistachio
30 gms of buffalo mozzarella
Salt, to taste
Crushed black pepper for seasoning
200 gms bread crumbs (flavoured with garlic and rosemary)
1 egg for egg wash
200 gms of flour
Sunflower oil
Method
Place the lamb cutlet in-between a cling foil and beat the cutlet till flattened. Mix buffalo mozzarella, pistachio, salt and pepper and blend in a mixer. Stuff the mixture between the lamb cutlet and roll. Add flour and egg wash, followed by bread crumbs. Heat some sunflower oil in a frying pan. Add the lamb cutlet and fry until golden brown.
