- Finalize the number of guests you expect. A good rule of thumb is to add 20 percent to the number of guests who have already RSVP'd or, if you haven't requested an RSVP, to subtract 20 percent from the number of guests you have invited. This is how many people you are buying meat for; don't forget to count yourself and your family.
- Consider the role of meat in your meal. Is it the main dish or the side dish, or part of another dish you are serving? The general recommendation is 12 oz. per person, if the meat is the main feature. If you have a lot of side dishes, or if the meat is being used in combination with another food (like curry), estimate around 1/3 lb. per person.
- If you're still unsure about how much meat to buy for your party, consider a larger cut of meat--like a roast or turkey. Unlike individual steaks or chicken breasts, these cuts allow you to control the serving, depending on how many people come to your party. This way, you will have enough for everyone at the table.
