- 1). Measure out an amount of buttermilk equal to the milk in your recipe. If, for instance, your recipe calls for 2 cups of milk, measure out 2 cups of buttermilk. Set the buttermilk aside.
- 2). Measure out 1/2 tsp. of baking soda per cup of buttermilk you are using in the recipe. In our example with 2 cups of buttermilk, we would measure out 1 tsp. of baking soda. Set the baking soda aside.
- 3). Reduce the amount of baking powder by 2 tsp. per cup of buttermilk. In our example, you would reduce the amount of baking powder in your recipe by a total of 4 tsp.
- 4). Make the recipe as normal, adding the buttermilk in place of the regular milk and the baking soda to the other dry ingredients. You do not need to make any other substitutions or modifications to the recipe.
