The Spanish love their holiday sweets, and Easter sweets are no exception. The local cafés fill up every afternoon as families sit down to eat their afternoon snack, the merienda, and savor the Easter pastries while they still can!
When Semana Santa comes around Spanish bakeries fill their shelves with homemade torrijas, a delicious version of Spanish french toast that are usually served cold. While versions vary throughout the country, one of the very best are the torrijas de miel, honey soaked french toast that go perfectly with a cup of Spanish coffee!
To serve as a dessert, simply top with vanilla ice cream and fresh berries, and pair with a glass of sweet Spanish wine.

Ingredients
- 8 slices of slightly stale thick white bread
- 1/4 cup of sweet white wine
- 1 slice of lemon peel
- 1 cinnamon stick*
- 3 eggs
- Olive oil for frying (or another vegetable oil such as canola oil)
- 3/4 cups of honey
- 1/4 cup of water
- Prep Time: 15 minutes
- Cook Time: 20 minutes
- Total Time: 35 minutes
- Yield: 8 French Toast
Preparation
*In addition to the cinnamon stick you could also add star anise, cardamon pods, and/or cloves for a non-traditional (but delicious) spiced version of Spanish French toast.
In a small bowl, infuse the wine with the lemon peel and cinnamon stick for one hour.
In a large bowl, beat the eggs.
In a frying pan, heat the oil over a medium heat (if possible use olive oil-- though not extra virgin).
Dip each slice of bread into the white wine on one side and rest on a dish with the wet side on top so that the liquid penetrates the whole slice.
Next, submerge each piece of bread in the egg mixture just long enough so that it is very saturated but does not fall apart.
Fry the egg soaked bread in the hot oil, flipping halfway to ensure a golden crust forms on each side.
Allow the fried bread slices to cool completely while resting over paper towels to absorb any excess oil.
In the meantime, heat the 3/4 cup honey and 1/4 cup water in a saucepan over a medium heat, stirring constantly.
Once simmering, remove from the heat and then submerge each slice of bread into the honey mixture until soaked through.
Arrange on a serving dish and drizzle some of the excess honey on top.
These Spanish French Toast are generally served cold or room temperature as a traditional Easter snack.
