Store lemons away from other ethylene-producing fruits, such as bananas, avocados or tomatoes. Ethylene gas, naturally emitted by these fruits, accelerates the ripening process. When stored together, this combination of multiple sources of ethylene accelerates the ripening process even further. - 2). Store lemons in a refrigerator. The Texas Produce Association says refrigeration allows Meyer lemons to keep up to 20 days.
- 3). Wrap lemons in plastic wrap and refrigerate. This is particularly recommended if the lemon has been cut open or partially used, as the plastic preserves the remaining lemon from interacting with the air and accelerating the ripening process.
