- Start harvesting kohlrabi when the fruit is about 1 inch in diameter. The smaller kohlrabi is tastier than the larger fruit. Once the fruit reaches about 3 inches it will become tough and develop a bad flavor.
- Even large kohlrabi may have some parts that are usable. This is usually at the top of the fruit. Cut this segment away from the rest of the fruit for use. In addition, the leaves of the kohlrabi can be used similar to other garden greens.
- Kohlrabi are commonly a fast-maturing plant. Some varieties reach maturity as little as 40 days after planting. This time frame gives the gardener a time period to begin monitoring the plant for harvest. The maturity date is commonly listed on the seed package as the number of days between planting and maturity.
- Plant the kohlrabi seed about two months before the average first killing frost to enjoy the fruit in fall. This allows the plant to grow through the late summer and mature during the cool temperatures of the fall. Monitor the size of the fruit as it develops and harvest following the same protocols as the spring-planted kohlrabi.
