- 1). Find a cool and dry room -- a basement or cellar, for example -- in which to store your potatoes. Scatter a layer of pickled lime on the concrete floor. Cover the entire area thick enough so the floor is no longer exposed.
- 2). Place potatoes on top of the pickled lime to a depth of four or five inches. Sprinkle another layer of pickled lime over the tier of potatoes.
- 3). Stack another layer of potatoes atop the first layer at the same depth. Repeat the scattering of pickled lime and potato layering until you run out of potatoes.
- 4). Cover the top layer of potatoes with straw. Sort through the potatoes every 14 to 21 days. Remove any old or moldy potatoes from the bunch.
