- 1). Place a standing rib roast into a roasting pan, fatty side up.
- 2). Combine the minced garlic, olive oil, ground black pepper, salt and dried thyme in a small bowl. Mix with your fingers and rub over the exterior of the standing rib roast. Leave the roast to set at room temperature for one hour.
- 3). Preheat an oven to 500 degrees Fahrenheit.
- 4). Bake the standing rib roast in the preheated oven for 25 minutes. Reduce the oven's temperature to 325 degrees Fahrenheit. Continue to bake for an additional seven minutes per lb. When finished, the meat should have an internal temperature of at least 145 degrees Fahrenheit.
- 5). Remove the roast from the oven and allow it to stand for 15 minutes before slicing and serving.
