- 1). Chop the onion and peel and dice the potato. Heat one tablespoon of the oil in the skillet over medium heat.
- 2). Add the onions, and sauté themuntil they are soft and caramelized. Remove the skillet from the heat and empty the onions from the pan onto the dish.
- 3). Heat the remaining tablespoon of oil in the skillet. Add the potatoes to the skillet in an even layer. Season the potatoes with the salt and pepper.
- 4). Cook the potatoes six or seven minutes, or until they start to brown on the bottom. Shake the pan while cooking to prevent the potatoes from sticking.
- 5). Place the onions back in the pan and use the spatula to press the potatoes into a pancake. Remove the hash browns from the pan with the spatula or a slotted spoon. Place on a plate lined with paper towels to remove the excess oil. Discard the paper towels, add additional salt and pepper, if desired, and serve hot.
