- 1). Pour 6 cups water and 1/8 cup Italian seasoning into a large pot. Bring it to a simmer.
- 2). After 5 minutes of simmering, turn off the heat. Add 1 cup sugar and 1 cup sea salt. Stir until they dissolve.
- 3). Allow the brine cure to cool to room temperature. Strain off the excess Italian seasoning and remove it from the pot.
- 4). Place the turkey into the pot, submerging the entire turkey in the brine cure, covering all parts. Remove it after 8 to 12 hours, and cook it using the method of your choice.
