Vegan Carrot Cake – Simple and Creative Vegan Cupcakes Making!

Making Vegan Carrot Cake is easy and fun to do. You can make some great Vegan Carrot Cupcakes that you can use as a Birthday Cake or for a picnic or other family outing. These cupcakes would even be great for a pot luck or at the office to have with coffee on your break. Regardless how you chose to serve them or how you chose to decorate them your friends and family will love this Vegan Carrot Cupcake recipe.

To make Vegan Carrot Cupcakes you will need the following Ingredients:
One and a half teaspoons baking powder
Two teaspoons baking soda
A half cup unsweetened applesauce
Two cups four
Three quarter cups sugar
One and a half teaspoons cinnamon
One half teaspoon nutmeg
Half teaspoon salt
A cup of crushed pineapple
A cup grated carrots
Quarter cup canola oil

Procedure:
1) Mix the baking soda and applesauce in a small bowel until foamy. Set aside.
2) Put flour, sugar, baking soda, nutmeg, cinnamon and salt in a large bowl and mix well.
3) Add the oil, carrots, pineapple and some of the juice and applesauce mixture to large bowl and mix very well.
4) Add flaked coconut, nuts or raisins-optional. Mix well again
5) Spoon mixture into twenty four cupcake liners until three quarters full. Bake in a moderately heated oven at three hundred twenty five degrees for thirty minutes or until toothpick inserted in center comes out clean.
Cool completely and frost with vegan fluffy butter cream Frosting
One quarter cup shortening that is not hydrogenated
One quarter cup margarine that is not hydrogenated
One and three quarter cups confectioners sugar sifted if necessary
Three quarter teaspoons pure vanilla extract-not artificial vanilla
One eighth cup plain soy milk
Combine the shortening and butter in a large bowl and beat well until frothy. Add sugar and beat an additional three minutes. Add vanilla and soy milk and beat for an additional five to six minutes until frosting is fluffy.
Spread generous amounts of frosting atop each cupcake and swirl with spoon until nice fluffy peaks are on each cupcake.

To make an extravagant Birthday presentation arrange seven frosted Vegan Carrot Cupcakes on a platter. Then stack six on top of the previous seven. Next stack five cupcakes and then four on the next two layers. The final two cupcakes create the peak of this cupcake Birthday tower. Additionally, if you have a three tier serving platter you may stack the cupcakes on this for presentation. You can also make shapes with cupcakes such a Christmas Tree shape for Christmas or a Bunny Rabbit for an Easter Party or even a Turkey for a Thanksgiving gathering. There are so many ways to present these cupcakes that your only limitation is your imagination.

Carrots are full of beta carotene, low in saturated fats and cholesterol. Carrots provide a good source of thiamine. Additionally, carrots offer an excellent source of niacin, vitamin B6, K, A, and folate and potassium. Further, carrots are full of fiber.
