One quarter cup shortening that is not hydrogenated
One quarter cup margarine that is not hydrogenated
One and three quarter cups confectioners sugar sifted if necessary
Three quarter teaspoons pure vanilla extract-not artificial vanilla
One eighth cup plain soy milk
Combine the shortening and butter in a large bowl and beat well until frothy. Add sugar and beat an additional three minutes. Add vanilla and soy milk and beat for an additional five to six minutes until frosting is fluffy.
Spread generous amounts of frosting atop each cupcake and swirl with spoon until nice fluffy peaks are on each cupcake.
