- 1). Soak your wood chips in water for three hours. This will make them last longer in your fishmeat smoker. The type of wood chips you use affect the flavor of your smoked fishmeat. You can purchase them at a grocery store. You may want to experiment with different kinds of wood chips.
- 2). Use your drill to make a hole near the bottom of the aluminum trash can the size required to thread your hot plate cord through it. Use your metal file to file the sharp edges of the hole so the cord won't get cut.
- 3). Center your hot plate at the bottom of the trash can. Do not let the hot plate's filament touch the sides of your trash can. Thread the the wire of your hot plate through the hole at the bottom of the can.
- 4). Put the charcoal box directly on top of your hot plate.
- 5). Put your soaked wood chips inside your charcoal box.
- 6). Lower your round grill into your trash can. You need your entire round grill for your fishmeat smoker; just the grate will not do. The grill needs to be large enough so that the narrowing diameter of your trash can holds it at least two feet above your hot plate.
- 7). Use your drill to create a hole in the lid of your trash can, where the meat-probe thermometer can fit through with its reader sticking outside the top of the lid.
- 8). Place your fishmeat on the grill. Plug in your meat-probe thermometer.
