Heat oven to 425°.
Line tart pans (3- to 4-inch in size) with homemade or purchased pastry.
In the top of a double boiler, beat eggs. Stir in the sugar, salt and milk; put the pan over boiling water and cook, stirring constantly, until thickened. Remove from heat and add vanilla. Gently fold in coconut and cheese. Spoon the coconut mixture into tart shells and bake for 15 to 18 minutes.
Makes 8 to 12 tarts, depending on size.
