Beer soup comes in two styles, sweet and savory. This simple, savory recipe depends on excellent quality ingredients, a good beef broth or fond, perhaps even homemade, a high quality lager beer and real German bacon.

Ingredients
- 1 onion
- 8 oz. cubed bacon
- 1 T. flour
- 2 c. (12 oz.) beer
- 4 c. beef broth
- Salt
- Roasted white bread slices
- Prep Time: 15 minutes
- Cook Time: 15 minutes
- Total Time: 30 minutes
- Yield: 4 servings
Preparation
Dice the onion and brown with the bacon cubes and extra oil, if needed. Sprinkle the flour over the onion and bacon and stir.
Mix the beer and the broth and pour over the onions a little at a time, stirring after each addition. Bring to a boil, then turn down the heat.
Season with salt, if necessary, and serve topped with roasted bread.
