- Cool-season vegetables such as broccoli, cabbage and lettuce can be grown in the spring or the fall in USDA zone 8. Spring typically begins in mid January and lasts until the beginning of March. Fall starts in the beginning of October and ends around the first of December. Plant spring vegetables as soon as the last frost has passed and the ground has thawed. Fall vegetables should be planted according to maturation dates before the first frost arrives.
- Summer begins early in USDA zone 8, typically commencing around March and lasting until the end of September. Tomatoes, watermelon, peppers, corn and sweet potato are all warm-season vegetables. Plant warm-season vegetables in early April for zone 8.
- Since USDA zone 8 has mild winters, several cool-season vegetables can be grown throughout the winter as well as the fall and spring. Lettuce and broccoli can withstand temperatures down to 20 degrees F. If a cold front hits the region, cover the vegetable appropriately to protect it until the cold spell has passed.
