Use soft butter not melted butter when creaming sugar and butter to make cookies. If it has been melted, place it in the freezer and remove it after a couple of minutes to make it more firm. You can also put the dough in the refrigerator after you mix the ingredients. Warm or room-temperature dough spreads more and can make your cookies flat.

A useful tip when making chicken stock is to think big! Make enough so that you can freeze it and use it in your recipes. You can use your homemade chicken stock for soups, casseroles and stews. Allow the stock to cool before freezing it in durable, Ziploc bags.

A great cooking tip to employ is to cook your vegetables in chicken broth. Not only will chicken broth help to keep vegetables from getting stuck to the pan, but they will add some nice flavors to the dish. Chicken broth is cheap, and can be bought anywhere.

If you are cooking, it's a good idea to wash each dish after using it. Keep one side of the sink full of sudsy hot water and use the other side to rinse clear. Your utensils and containers wash up easier the sooner you get to them, and washing them as you go also allows you to re-use them while preparing the same recipe.

Measuring and chopping ingredients before you begin cooking can save you time. You can often prepare ingredients for upcoming meals a day or two in advance. Dry your own tomatoes. Start by slicing a ripe tomato one-half inch thick, or you can cut Roma tomatoes in half lengthwise. Place on a cooling rack, cut-side up and lightly salt them. Set the rack on a cookie sheet in an oven at 190 degrees for a 10 hours. You can store your dried tomatoes in a plastic bag in the freezer. Dried tomatoes may also be stored in a jar containing fresh herbs and olive oil. The tomatoes will need to be refrigerated and should be consumed within a couple of weeks.

Keep tabs on the amount of cooking oil you use. To lower the fat you use when cooking, make sure to measure the oil you use as opposed to just pouring it straight into the pan. By doing this, you can keep a close eye on the amount of oil you use in cooking.

Sauteing vegetables is an extremely healthy method of cooking them. Consider adding chicken broth for some added flavor. Not only does it lessen the amount of cooking oil needed as per a traditional saute, the broth adds an extra dimension of flavor to the vegetables.
