- 1). Boil 2 cups of water mixed with 1 1/2 tbsp. of vegetable oil in a large saucepan. Stir in 1 1/2 cups of couscous and bring to a boil, then cover.
- 2). Turn off the heat, but leave the saucepan on the hot burner. Let the couscous stand until all of the water is absorbed, about seven to nine minutes. Remove the couscous from the heat and let it cool. Transfer to a large serving bowl.
- 3). Top the couscous with the dried fruit, 1 cup of chopped cashews and 1/4 cup of orange chutney. Mix well and cover. Transfer the dish to the refrigerator for 15 to 20 minutes to let the flavors mix.
- 4). Remove the finished couscous from the refrigerator and uncover. Scatter chopped mint sprigs over the top of the couscous and serve.
