This simple oil and vinegar marinade is a favorite with beef. Use it for marinating steaks, kebabs, and other cuts to be broiled or grilled.
Mix all ingredients together.
Marinate beef for at least 4 hours before cooking.
Yield: 1/2 cup, enough for 1 - 1 1/4 pounds of beef. To multiply, increase all ingredient quantities equally.

- 4 tablespoons of good quality red wine vinegar
- 4 tablespoons of extra virgin olive oil
- 1/4 teaspoon of dried thyme
- 1/4 teaspoon of dried Greek oregano (rigani)
- 1 clove of garlic, minced
- 1/4 teaspoon of freshly ground black pepper
