- 1). Mix the soy flour with whatever seasoning you like, about 2 to 3 teaspoons altogether. (Salt and pepper, seasoned salt, poultry seasoning, lemon pepper or cayenne are good choices.)
- 2). Beat the eggs with the milk, cream or water.
- 3). Dredge the chicken pieces in the soy flour. Dip them in the egg mixture, then back in the soy flour, being sure to coat well.
- 4). Heat the oil to 350 F. If you don't have a candy thermometer, test the oil temperature with a small piece of bread. If the bread browns quickly, the oil is ready.
- 5). Carefully add your chicken pieces to the pot, being sure not to crowd them. Fry until the coating is golden brown, then drain on a cooling rack placed over newspaper or paper towels.
- 6). Test the internal temperature of the chicken. It should be 165 F. If not, bake the chicken at 350 F until it reaches a safe temperature.
