Easy Popovers



Popovers are a light, airy bread roll that's hollow in the center.  They are delicious on their own or served with fruit and whipped cream or sliced meats.  The key to preparing popovers is a hot oven and preheating the pan.  It helps to use a popover pan which has straight sides rather than angled like muffin tins but a muffin pan will work or even small ceramic custard dishes.

Ingredients
  • 3 tablespoons unsalted butter, melted, plus more softened for greasing the pan
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole milk, room temperature
  • 4 large eggs
  • 1/2 teaspoon kosher salt

  • Prep Time: 5 minutes
  • Cook Time: 30 minutes


  • Total Time: 35 minutes
  • Yield: Makes 12 popovers


Preparation

Heat oven to 400° F.  Grease the cups of a popover pan, nonstick muffin pan, or custard dishes with softened butter.

In a large bowl, whisk together the flour, milk, eggs, butter, and salt until only a few lumps remain (do not overmix). The batter will be thin.

Place greased popover pans in the oven for 2 minutes to preheat. This is an important step to help the popovers rise quickly.

Divide the batter among the prepared muffin cups, do not fill each cup more than half full.

  Bake until puffed and a deep golden brown, 30 to 35 minutes. (Do not open oven door before 30 minutes or the popovers will collapse!)  Serve immediately.
